Joe's Individual Pineapple Upside Down Cake |

| Dutch Oven |
Yellow or White Cake Mix |
| 25 Tuna Cans |
1 Cup Brown Sugar |
| Aluminum Foil |
1 Cup Chopped Nuts |
| Can Opener |
25 Sliced Pineapples |
| Mixing Bowl |
25 Marachino Cherries |
| Spoon for Mixing |
1¼ Cup Water |

1/3 Cup Oil |
| |
2 Eggs |
| |
Small Can of Crisco |
| |

| Directions: |
|
- Put aluminum foil inside Dutch Oven.
- Put dutch oven on coals to pre-heat with coals on lid.
- Use napkin to put Crisco in 25 tuna cans and put flour inside tuna cans.
- Put brown sugar, sliced pineapple and cherry in bottom of tuna can. (Chopped nuts may be added before pineapple.)
- Mix cake batter according to instructions on box. When batter is mixed pour evenly over pineapple. Keep batter below the halfway mark.
- Place tuna cans in dutch oven forming a stacked circle.
- Place oven over coals with a few coals on the lid.
- Check in five (5) minutes. If crust has started to form, the fire is too hot. Remove some coals from the lid.
- Check in ten (10) minutes. There should be a slight crust forming. If there is a heavy crust or browning, remove most coals from the lid. If there is no crust forming, add more coals to the bottom and to the lid.
- Check in twenty (20) minutes. There should be a slight browning. If there is no browning, add coals to the lid. If there is a dark browning remove all coals from the lid. Test for doneness, by pushing a toothpick into the cake. If it comes out dry or with dry crumbs, cake is done. Remove cans from oven. (If cake is not done, check every five (5) minutes until done.)
- Let cans cool and then flip cans over onto paper plate.
- Serve with Cool Whip or Ice Cream.
