Peach Cobbler

Ingredients:  
   
Four 29 oz cans of peaches in light syrup or natural juice, drained but reserve the syrup or juice
1 box Jiffy brand white (or yellow) cake mix 1 egg
¼ pound butter (1 stick) ½ box light brown sugar
   
Directions:  
  1. Preheat Dutch oven.
  2. Melt butter in bottom of Dutch oven. Stir in brown sugar and heat until thoroughly melted, stirring constantly.
  3. Add drained peaches and one can of juice or syrup. Heat until just bubbling.
  4. Mix cake mix according to box directions, but substituting peach juice or syrup for water. Spread cake mix evenly on top of peach mixture in Dutch oven.
  5. Cover and bake with coals on top and bottom (about 350 degrees) until toothpick inserted into cake mix comes out clean (about 45 minutes)

Note: best if made in a 10-inch Dutch oven
