Tomato Basil Couscous Salad

Serves 2

Ingredients:  
¾ cup cooked couscous 1 tsp extra-virgin olive oil
1 tomato, chopped 1 Tbsp fresh lemon juice
⅓ cup chickpeas 1 Tbsp chopped fresh basil
2 scallions, chopped Baby spinach
   
Directions:  

Preparation at home: Combine the couscous, tomato, chickpeas, scallions, oil, lemon juice, and basil in a bowl.

At camp : Serve on a bed of baby spinach.
