Savory Black Beans over Rice |

| 6 oz package quick-cooking brown rice |
½ tsp salt |
| 1 Tbsp olive oil |
½ clove garlic, minced |
| 1½ cups canned black beans |
1 cup cherry tomatoes, halved (or ½ cup sun-dried tomatoes) |
| 2 tsp paprika |
½ tsp white pepper |

| Directions: |

| Prepare rice according to package directions. Heat oil in a skillet, then add black beans, paprika, pepper, salt, garlic, and tomatoes. Cook, stirring occasionally, for approximately 90 seconds or until hot. Remove from heat and serve over rice.
