Savory Black Beans over Rice

Serves 3

Ingredients:  
6 oz package quick-cooking brown rice ½ tsp salt
1 Tbsp olive oil ½ clove garlic, minced
1½ cups canned black beans 1 cup cherry tomatoes, halved (or ½ cup sun-dried tomatoes)
2 tsp paprika ½ tsp white pepper
   
Directions:  
Prepare rice according to package directions. Heat oil in a skillet, then add black beans, paprika, pepper, salt, garlic, and tomatoes. Cook, stirring occasionally, for approximately 90 seconds or until hot. Remove from heat and serve over rice.
